chicken peri-peri is an African barbecue chicken recipe which was introduced in Africa by the Portuguese went actually got in the spice.  it derives its name from the Peri-Peri sauce itself.

Ingredients:

  • 1 kg Chicken 
  • 100 ml Extra Virgin olive oil
  • 10 - 13 garlic cloves
  • 5 ripe serrano chilies
  • 10- 12 African devil red chilies
  • 3 Bay leaves 
  • 1 tsp smoked paprika 
  • Sea salt as required
  • 1 lemon juice
  • Parsley
  • 3-4 charcoal chunks
  • 1 tbsp oil

How to make Chicken Per-Peri?

Method:

  • Take some African devil chilies which are extremely pungent,  give them a rough cut, and add them straight in the grinder.

  • Take some Mexican right serrano chiles the serrano chiles wonderfully balance the flavor and texture of the devil's chili.

  • In the grinder add in some bay leaves, fresh garlic cloves, a sprinkle of sea salt and some extra virgin olive oil.
  • Another hint of spice, that balances the smokiness of this recipe is smoked paprika and finally a little bit of lemon juice. (the traditional recipe of a chicken peri-peri does not call for lemon juice but I love adding that.

How to make Chicken Peri-Peri without barbecuing it?

The marination for Chicken Per-Peri:

  • Take the pieces of chicken and cut these into the desired size or  into the required number of pieces (make sure you remove all the fat and sinews)

  • Transfer the cut pieces of chicken in a large bowl and add in the periphery spice mix with the help of a Tong or gloves.

(Make sure you mix them nicely because that mixture is going to be extremely pungent)

Note: The extra peri-peri sauce, by the way, can also be bottled and can go in your refrigerator for an easy 15 to 20 days

How to add barbecue flavor to the chicken Peri-Peri?

while the same barbecue flavor can also be created in your own home kitchens by a small little trick and that is by infusing the bowl with smoking charcoal.

  • On the burner place a few pieces of wood charcoal and light them up till they turn red.  
  • Take a small bowl, place that in the middle of the marinated chicken pieces and add a little bit of oil over the charcoal and cover it with a lid or aluminum foil.

  • Leave it for 30 mins.

  • Take a grill pan and heat in a moderate flame. Once the pan is heated completely place the chicken pieces.

Note: Don’t add oil the marinade itself has a good amount of oil. Overcrowd the pan otherwise it may just start releasing a lot of moisture.

  •  Increase the flame and make sure this gets nice brown marks on both sides.

  • Keep turning the pieces of chicken once twice over and make sure they're nice and brown on all sides.
